Conch Pesto Marinara Sauce
- 1 cup NEPTUNE'S GROUND CONCH
- 2 tbl. Olive Oil
- 2 shallots, chopped
- 4 cloves garlic, chopped
- 1 pint tomatoes, peeled & diced
- 1/2 cup tomato puree
- 1 pint tomato juice
- 1/2 bunch parsley, chopped
- 1 bunch basil, chopped
- 1/4 cup fresh butter
- 1 lb. Cooked pasta
Instructions
Saute shallots. Add garlic and saute. Add tomato and puree. Simmer for 1/2 and hour, and then add conch and simmer another 1/2 an hour. Add herbs and butter. Serve over pasta. Serves 8.
